I have successfully for almost a week been getting up early and spending 20 minutes working out on my spinning bike while watching the news and then doing a few kettle ball exercises. After the workout I have been making a healthy breakfast and making sure the house and dishes are all picked up before leaving…. It is amazing how rewarding it feels during the entire day to do those few little things in the morning, we will see how long this lasts.
One of the healthy breakfast meals I have been making is Spinach Feta Eggs. Now it isn’t as easy as pouring milk and cereal in a bowl but it is pretty close.
1/2 cup spinach
3 eggs (I use one whole egg and two egg whites)
Tablespoon or two of feta
I cook the eggs in a frying pan on medium heat and scramble them up a bit as I go.
While they are cooking I shred up the spinach with my hand until they are quarter sized pieces or smaller. Once the eggs are half done I stir in the spinach.
Just before I am done cooking the eggs I add the feta and some pepper and stir together just before taking off the burner.
Then I eat!
We have a ton of lunch meat left over from labor day weekend so one morning I even added a slice of deli ham to mix it up.
